feat: offer Claude Sonnet 5.5 in model pickers - #7935

Adds claude-sonnet-5-5 to Superset chat, Claude Code, Copilot (claude-sonnet-5.5), OpenCode and OMP catalogs, and to the Slack bot's model list with adaptive thinking. Cursor is left out: its live catalog did not expose a Sonnet 5.5 id to verify.
